Trachanas (couscous) Sweet/ Sour

Couscous, frumenty, tarkhana Armenian or trachanas are names for a dried food based on a fermented mixture of grain and sheep’s yoghurt (sour trachanas) or fermented sheep’s milk (sweet trachanas), made into a thick soup with water, stock, or milk. It contains only cracked wheat or a couscous-like paste and fermented milk.

Tips: Cold nights call for a warm bowl of trachanas soup, rich and satisfying. Taste trachanas soup with lemon and olive oil and you won’t regret it!
